Getting to 400 Grams of Vegetable
The Positive Eating Plan calls for at least 400 grams of vegetable a day. If you ever weigh out 400 grams of raw spinach, it could look quite daunting. But there are many other wonderful vegetables and it’s not hard to make the quota, at all. For dinner tonight I made a fish and vegetable stew. The ingredients include (Not including the sauces and spices. You could take this stew in many different directions in terms of flavor, and the Positive Plan does not care if you need a little bit more sodium or sugar in your sauce.):
- One eggplant: 210 grams.
- One tomato: 195 grams.
- One bunch of cilantro: 100 grams. A big portion of the weight is in the stems. I cut them up into tiny pieces and put them in the stew. Something I learned from Jacques Pépin.
- 150 grams of fish
- 50 grams of wild rice and 50 grams of brown rice.
It ended up looking like this:

Job done. I celebrated with a small tub of ice cream:-) The difference is this eating plan has no problem with that.
